Ga xao chua ngot - Sweet and sour chicken

500g Chicken meat, 150g cucumber, 80g onion, 4 cloves garlic chopped, 100g cauliflower, 2 stalk of celery, 80g tomato,shredded, 30g pickled leeks, 10g ginger shredded.

Sauce.

10g salt, 20ml light soya sauce, 40ml vinegar, 20ml oyster sauce, 10ml sesame oil, 30g sugar, 150ml water.

Batter.

200g wheat flour,100g cornflour, 20g rice flour, 5g sugar, 5g baking powder, 500ml water.

1. Cut the chicken meat into serving pieces. Keep aside in fridge.

2. Cut cucumber,carrot and celery diagonally. Cut cauliflower ,tomato and onion into cubes.

3. Combine the sauce in a bowl: put aside.

4. Deep fry chicken in batter and drain well . Put on serving plate.

5. Heat 30ml oil in wok; add garlic and sauce. Cook for 1 minutes and add vegetables,then stir-fry for 3 minutes. Lastly thicken with cornflour,pour on top of chicken.

Complete with garnish.

This should serve 4 people.
